A traditional pure pig fat made in the hills of northwestern Tuscany, lardo di Colonnata is one of the world's great culinary delicacies. Made by maturing pork back fat with salt, garlic and peppercorns, lardo is customarily served in wafer-thin slices on good toasted bread, so the residual heat of the bread loosens the fat. It's also very good spread thinly on bread and topped with a light drizzle of honey.
