Regarded as one of the finest of all Italian salamis, salame Felino is a delicate, lightly cured, soft, coarse-cut sausage from the area of Felino near Parma. Made with a high proportion of top-grade lean pork, it is a lightly cured, sweet salame flavoured with peppercorns, a little garlic and local white wine. Serve as part of an antipasto misto, or eat with a sliver of Parmigiano and some good bread.
