One of the most famous of all Calabrian foods, nduja (pronounced en-doo-ya) is a soft, sweet-spicy spreadable salami. Originally from the village of Spilinga, it is made with pork meat, a little fat, salt and a lot of red pepper. It is even claimed that nduja is an aphrodisiac, and that its good for the heart. True or not, it's deliciously moreish. Eat on crostini or bread, or in pasta sauces - the locals even add it plain to cooked pasta, much as you'd use pesto.
