A Tuscan favourite, wild boar salame is in a class of its own. With a more powerful flavour than other salami, this is a beautifully lean sausage, a little drier in texture, not least because boar meat tends to contain less fat than pig.
Enjoy with a full-bodied red wine to balance the impressively big flavours.
