A stunning sheep's milk cheese originally from Lazio, pecorino is well known for having the sharpest "bite" of all the hard-grating Italian cheese. Our cheese made by the best Italian cheesemakers, certainly lives up to that reputation.
Matured for at least 10 months, our pecorino is well suited to grating or cooking. It is an essential ingredient in an authentic pesto - a proper balanced pesto should feature both parmesan and pecorino, alongside the basil, oil and pine nuts. This is the cheese to turn to whenever you want a sharper flavour in your cooking - it's especially good in spaghetti cacio e pepe.
